This super simple, easy breakfast is a great and nutritious way to start your day! Eggs are a great protein source to get your morning started off right. Having protein in the morning helps to keep you full through the day and will refill your stores after a nights sleep. For this omelette, I use cheddar cheeses because they are lower in fat and easier to digest then some creamy cheese. Cheese is also a protein source and is a great source to get calcium and enhance your bone strength.
This omelette caters to lots of toppings. I chose fresh cherry tomatoes and chives from the garden to keep it light and flavourful, but you can choose whatever vegetables are avaiable.
One thing that is great about a french omelette is it’s simplicity! Simple crack the eggs, whisk them, and pour them into a pan. Let the eggs cook till almost completely through add the grated cheese and toppings and voula! you have an elegant, yet simple, and healthy breakfast!
Cheesy French Omelette:
6 eggs
1/2tsp salt
1/4tsp pepper
1tbsp margerine (or butter)
Toppings
1/4cup cheddar cheese
1/4cup cherry tomatoes, or your favourite vegetable topping
1tbsp chives, chopped
*make sure to use a non stick skillet or pan
- Whisk the eggs, salt, and pepper in a bowl until the eggs begin to create a light foam (there should be little bubbles at the top).
- Over medium heat, coat skillet or frying pan with a thin layer of margerine. Add whipped eggs. Do not touch the pan after this
- While eggs are cooking, prep toppings.
- Once eggs are cooked about 3/4 of the way through (there should only be a small amount of liquid egg that is visible; you can use tin foil over the skillet to quicken the egg cooking time.) Using a spatula, gently slide around the outside of the eggs to make sure the omelette is not sticking too much to the pan. (takes about 7-8 minutes)
- Sprinkle cheese on the top and allow to cook for about 1 minute or until the cheese begins to melt. Add the rest of the toppings and cook for 2 more minutes.*
- Once there is no more liquid eggs, gently slide the omletelle onto a plate and serve immediatly.

* you can make this lactose free by omitting the cheese and just adding toppings that are your favourite.
